matcha mochi waffles

these matcha waffles are the perfect combination of classic japanese mochi and american-style waffles with crispy edges and a perfectly soft and chewy texture on the inside.

prep time: 15 min

cook time: 20-25 min

total time: 40 min

servings: about 8-9 (4") waffles

ingredients:

  • 2 cup + 1 tablespoon mochiko (sweet rice flour)
  • 1/2 cup all-purpose flour
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoon terra matcha organic culinary matcha
  • 2 tablespoon cane sugar
  • 1 large egg
  • 2 tablespoon coconut oil, melted

directions:

  1. preheat the waffle iron according to the manufacturer's instructions.
  2. mix the mochiko, all purpose flour, baking powder, baking soda, salt, and matcha in a small bowl.
  3. in a large bowl, whisk together the cane sugar, buttermilk, egg, and coconut oil until well combined.
  4. slowly add the dry ingredients to the liquid ingredients and mix well.
  5. pour the batter into the waffle maker and cook according to the manufacturer's instructions.
  6. serve immediately with your desired toppings such as maple syrup, whipped cream, fresh fruit, or anko (sweet red bean paste)
  7. enjoy!

notes:

  • for accurate measurement, spoon each flour into the measuring cup and use the back of a knife to level off the top.
  • buttermilk can easily be made from scratch by combining 1 cup of dairy or nondairy milk with 1 tablespoon of lemon juice and letting it sit for at least 5 minutes.
  • cooking time may vary depending on the manufacturer and size of the waffle iron being used.
