matcha avocado hummus

ripe avocado and earthy matcha are the perfect duo to elevate this delicious, homemade hummus that's packed with chickpeas, fresh herbs, bright citrus, and creamy tahini.

servings: 4-6

ingredients:

  • 1-15 oz can chickpeas
  • 1/2 cup +  1 tablespoon tahini
  • 1 handful fresh basil
  • 1/2 medium avocado
  • 1 teaspoon terra matcha organic culinary matcha
  • 3 tablespoon extra-virgin olive oil
  • juice of 1 lemon
  • 1/2 teaspoon salt
  • pinch of ground black pepper
  • crackers, vegetables, and/or pita bread, for serving.

directions:

    1. drain and rinse the chickpeas while serving the aquafaba/liquid from the can in a small bowl.
    2. to a blender or food processor, add the chickpeas, 1 1/2 tablespoon of aquafaba, tahini, basil, avocado, matcha, olive oil, lemon juice, salt, pepper, and garlic. blend until smooth and creamy. if the mixture is too thick, add more aquafaba or tahini 1/2 tablespoon at a time.
    3. taste and adjust the flavor with seasonings if needed. transfer to a serving plate or bowl, cover, and store in the refrigerator until ready to serve.
    4. top with a drizzle of olive oil and serve with crackers, vegetables, and/or pita chips.
    5. enjoy!

    notes:

    • store leftovers in an airtight container in the refrigerator for up to 3-4 days.
