crumble:
- 1-1/4 cup rolled oats
- 1 cup all-purpose flour
- 3/4 cup oat flour
- 1 teaspoon baking powder
- 1 teaspoon terra matcha organic culinary matcha
- 1/2 cup cane sugar
- 1/4 teaspoon salt
- 12 tablespoon (3/4 cup) cold unsalted butter, cubed
filling:
- 4 honeycrisp apples, peeled and chopped (heaping 3 cups)
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- pinch of salt
- 4 tablespoon brown or coconut sugar
- 1 teaspoon coconut oil
- 1 teaspoon arrowroot starch
directions:
- preheat the oven to 350°F and line a 8x8 baking sheet with parchment paper.
- in a medium pot, cook the apples, lemon juice, cinnamon, vanilla extract, salt, brown sugar, and coconut oil over medium-low heat. stir occasionally and allow the apples to cook down to release the juices and soften for about 15 minutes. once done, remove from the heat, quickly stir in the arrowroot powder, and set it aside.
- in a food processor, pulse together the oats until they are in small pieces (some powder will form). add the all-pupose flour, oat flour, baking powder, matcha, cane sugar, and salt. continue to pulse a few more times until combined. transfer the mixture into a large bowl and add the butter. cut the butter into the dry mixture using a pastry cutter until you achieve pea-sized pieces and a crumbly dough forms.
- press about 1/3 of the crumble mixture (set aside roughly 1/2 cup for topping) onto the prepared baking dish in an even layer. bake for 10 minutes or until light golden brown.
- remove from the oven and spoon the apple filling mixture on top in an even layer. sprinkle with the remaining crumble mixture and bake for another 25 minutes or until light golden brown.
- transfer the baking dish onto a cooling rack. allow to cool completely and come to room temperature directly in the pan.
- once cooled, cover and place the baking dish in the refrigerator for 1-2 hours before cutting it.
- cut into squares and enjoy!
