ingredients:

panna cotta:

• 1 cup heavy whipping cream
• 3 tablespoon cane sugar
• 1 1/2 teaspoon terra matcha organic culinary matcha
• 3/4 teaspoon gelatin powder
• 1 tablespoon warm water

grapefruit gelee:

• 1 cup red grapefruit juice
• 1 1/2 tablespoon cane sugar
• 1/2 tablespoon + 1 teaspoon gelatin powder
• 1 tablespoon warm water

directions:

1. to make the panna cotta, add the gelatin powder and warm water to a small bowl and mix to combine. let it sit for 5 minutes to allow the gelatin to "bloom".
2. meanwhile, bring the heavy whipping cream, cane sugar, and sifted matcha to almost a boil in a medium saucepan over medium-low heat. stir occasionally.
3. remove the pan from the heat, add the gelatin mixture, and whisk well.
4. transfer the panna cotta mixture evenly into two serving cups.
5. allow the cream to come to room temperature, cover with plastic wrap, then store in the refrigerator for at least 2 hours.
6. when the panna cotta is set, prepare the gelee layer. add the gelatin powder and warm water to a small bowl and mix to combine. let it sit for 5 minutees to allow the gelatin "bloom"
7. meanwhile, bring the grapefruit juice and cane sugar to almost a boil in a medium saucepan over medium-low heat. stir occasionally.
8. remove the pan from the heat, add the gelatin mixture, and whisk well.
9. once cooled to room temperature, pour the jelly mixture over the panna cotta, cover with plastic wrap, and store in the refrigerator for at least 2 hours or until set.
10. top with grapefruit slices and mint if desired.
