matcha granola

this vibrant and healthy granola is the perfect addition to yogurt, oatmeal, and more from a wholesome snack or meal.

servings: 4 cups

ingredients:

  • 2 cups rolled oats
  • 1/4 cup unsalted pistachios
  • 1/4 cup sliced almonds
  • 1/4 cup pecans
  • 1/4 cup pumpkin seeds (pepitas)
  • 1/3 cup unsweetened coconut chips
  • 2 tablespoon hemp seeds
  • 2 tablespoon chia seeds
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon terra matcha organic culinary matcha
  • 1/4 cup creamy cashew butter, unsweetened and unsalted
  • 3 tablespoon coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup goji berries

directions:

  1. preheat oven to 330°f and line a baking sheet with parchment paper.
  2. in a large bowl, combine the rolled oats, pistachios, almonds, pecans, pumpkin seeds, coconut chips, hemp seeds, chia seeds, cinnamon, salt, and matcha.
  3. in a medium bowl, whisk together the cashew butter, coconut oil, maple syrup, and vanilla extract.
  4. immediately add the cashew butter mixture to the dry ingredients and gently fold with a rubber spatula until well coated.
  5. pour the granola mixture onto the prepared baking sheet and spread it out to create a single, thin layer.
  6. bake for 12-13 minutes and rotate the baking sheet halfway through.
  7. remove the granola from the oven and let it cool completely on the baking sheet for at least 30 minutes. the granola will feel a bit wet but will harden and crisp as it cools.
  8. break the granola into chunks/pieces, add the goji berries, and gently toss to combine
  9. store it in an airtight container at room temperature for 1-2 week or in a sealed bag in the freezer for 2-3 months.
